Sage (Salvia officinalis) – Strength in Stillness

Sage is one of the oldest cultivated herbs in Europe, at home along the Mediterranean and in monastery gardens for centuries. Its silver-green leaves are unmistakable — velvety, aromatic, and holding their scent long after drying.

The taste is bold and earthy, with a slight bitterness and a resinous, almost pine-like depth. Sage is not a background herb. Used generously it takes over a cup entirely, which is why we measure it carefully.

In Our Blends

Sage gives a blend weight. It anchors the lighter, brighter herbs and keeps a tea from feeling thin. In MeriPure it sits beneath the mint and lemon verbena, adding depth without ever stepping forward.

We harvest our sage in early summer, before flowering, when the leaves carry the most aroma.
